Recipe: Healthy Strawberry & Apple Crumble

Healthy Strawberry & Apple Crumble

Serves: 4-5

Prep time: 15 minutes

Cook time: 25 minutes

  • 750g green apples, skins and core removed, diced
  • 2 tablespoons water
  • 2 teaspoons vanilla extract
  • 500g strawberries, tops removed, quartered
  • 1 tablespoon tapioca starch

  • 1 cup rolled oats
  • ½ cup flaked almonds
  • 2 tablespoons rice flour
  • 3 tablespoons maple syrup
  • 3 tablespoons olive oil
  • 2 teaspoons vanilla extract

To serve

  • Nature One Dairy Vanilla Creamy Custard

  1. Preheat the oven to 170 degrees Celsius.
  2. Add the diced apples, water, and vanilla extract to a medium saucepan. Bring to a low heat and stir to combine. Simmer, stirring occasionally to prevent sticking to the bottom of the pan. Once the apples are beginning to soften, add the strawberries and tapioca starch. Stir to combine.
  3. Once the strawberries start to soften, turn off the heat and set the saucepan aside.
  4. To make the crumble, add the rolled oats, almonds, and rice flour to a bowl. Stir to combine.
  5. In a separate bowl, whisk together the maple syrup, olive oil, and vanilla. Pour the maple mixture into the dry ingredients and stir to combine.
  6. Spoon the apple and strawberry filling into 4 individual ramekins or into one small baking dish. Sprinkle the crumble mixture over the top of the filling.
  7. Place the ramekins into the oven and bake for 25 minutes, or until the crumble is golden.
  8. Remove from the oven and serve warm topped with Nature One Dairy Vanilla Creamy Custard.
