Recipe: Healthy Lunchbox Gummies

Pomegranate Gummies

Makes: approx. 24 gummies

Prep time: 15 minutes

Setting time: 1-2 hours      

 

Ingredients

¾ cup pomegranate juice

¼ cup grass fed gelatin

1/3 cup water

 

Manuka Honey Orange Gummies

1 cup fresh orange juice

1/3 cup water

¼ cup gelatin

2 tablespoons manuka honey

 

Method

Pomegranate Gummies

  1. Bloom the gelatin by adding the water and gelatin to a small bowl and stirring to combine. Set aside.
  2. Add the pomegranate juice to a small saucepan and bring to a low heat. Once steam begins to rise from the juice, add the gelatin and stir until all of the gelatin has dissolved.
  3. Immediately remove from the heat and pour the pomegranate mixture into a heatproof pouring jug, preferrable glass.
  4. Carefully pour the gummy mixture into silicon moulds or alternatively into a glass dish. Place into the fridge for 1-2 hours to set. The time can change depending on the size of the mould chosen. The bigger the mould, the longer the gummies will take to set.
  5. If using a glass dish, once set, use a knife to slice into cubes.

  2. Add the orange juice to a small saucepan and bring to a low heat. Once steam begins to rise from the juice, add the gelatin and stir until all of the gelatin has dissolved. Add the manuka honey and stir until dissolved.
  3. Immediately remove from the heat and pour the orange juice mixture into a heatproof pouring jug, preferrable glass.
  4. Carefully pour the gummy mixture into silicon moulds or alternatively into a glass dish. Place into the fridge for 1-2 hours to set. The time can change depending on the size of the mould chosen. The bigger the mould, the longer the gummies will take to set.
