Recipe: Coconut Chia Pudding

Coconut Chia Pudding

  • ¼ cup chia seeds
  • 1 cup coconut milk beverage
  • 1 tablespoon pure maple syrup
  • 1 teaspoon vanilla extract
  • 1/3 cup coconut yogurt


  • Mango, diced
  • Raspberries
  • Cherries
  • Or other seasonal fruit of choice
  • Toasted coconut flakes


  1. Add the chia seeds to a medium-sized bowl. Top with coconut milk, maple syrup, and vanilla extract. Whisk to combine.
  2. Continue whisking until the chia seeds begin to absorb the liquid so that the chia seeds don’t clump together. Cover the bowl and refrigerate to set for about 1 hour.
  3. Once the chia pudding has set, remove it from the fridge and stir through the coconut yogurt.
  4. To serve, divide into serving bowls and top with your choice of seasonal fruit and a drizzle of maple syrup if desired.
