Ingredients
- ¼ cup chia seeds
- 1 cup coconut milk beverage
- 1 tablespoon pure maple syrup
- 1 teaspoon vanilla extract
- 1/3 cup coconut yogurt
Toppings
- Mango, diced
- Raspberries
- Cherries
- Or other seasonal fruit of choice
- Toasted coconut flakes
Method
- Add the chia seeds to a medium-sized bowl. Top with coconut milk, maple syrup, and vanilla extract. Whisk to combine.
- Continue whisking until the chia seeds begin to absorb the liquid so that the chia seeds don’t clump together. Cover the bowl and refrigerate to set for about 1 hour.
- Once the chia pudding has set, remove it from the fridge and stir through the coconut yogurt.
- To serve, divide into serving bowls and top with your choice of seasonal fruit and a drizzle of maple syrup if desired.
